When you know blades, you know the Japanese know blades, and steel. When I got serious and wanted a good kitchen knife I thought to go nowhere else other than a Japanese style chef knife. I haven’t been disappointed. This knife is modeled in the typical style of a standard Japanese chef knife. These style blades make every single cut well. I have yet to find someone say “nah, I don’t like them”. Not one. This knife will be your primary tool. If you have never used an octagonal handle your in for a real treat. It will become a part of you hand.

High carbon steel with a satin finish. Estimated 62-65 Rockwell hardness.

12.25″ long with a 7″ Blade length.

Made of high carbon steel (1095) in 3/32 (0.094) thickness.

You can get it in multiple handle styles such as Micarta, Wood, Bone, or G10.  This handle is bloodwood and curly maple, and looks fantastic!

Curly Maple, Black Walnut, & Bloodwood (handle will be boiled Linseed oil finished)
